A wholesome blend of Melinda’s signature flour, coconut, real dried & crushed raspberries and sweetened naturally with glucose and stevia (low sugar).
Just add coconut cream, butter and eggs (or substitutes). Lovely with a couple of fresh or frozen raspberries added to the batter before cooking. Makes 12 cupcakes
Creative Variations
Add three (3) fresh or frozen crushed raspberries to the batter before cooking.
Serve warm with cream.
Blend some crushed raspberries through whipped cream just before serving (it may curdle the cream so combine just before serving!)
Freeze leftover coconut cream in 80ml portions for your next batch
