Ingredients:
¼ cup LFGF Chicken Seasoning
1 egg
3 Tbsp Full cream Milk
500g chicken
Olive Oil
Method:
1) Whisk egg & milk together in a medium bowl
2) Place chicken in batter and turn to coat
3) Spread out LFGF Seasoning on a plate and place chicken in flour. Turn chicken in flour until generously coated in chicken seasoning. Set aside on plate on a separate plate
4) Heat enough oil on high heat in a pan to almost cover the chicken
5) Secret Method: Cook chicken in batches
-Add half the seasoned chicken into hot oil and fry for 5 minutes until the coating starts to crisp up. Remove from pan and place on a paper towel lined plate. Repeat with remaining chicken.
-Place the first batch of chicken back into the pan of hot oil again to finish off cooking, making sure you’re turning the chicken to get even heat and prevent burning. The chicken is cooked when the outside is crispy and golden brown, and the chicken inside is no longer pink. Repeat with second batch until all chicken is cooked.
